You can start / stop the web proxy with:
systemctl start webproxy

Sorry forgot about the dashboard and the RX monitor. RX monitor uses 8080 TCP.
Also you can stop Quantar Bridge with:
systemctl stop quantar_bridge
systemctl disable quantar_bridge

Frank,
31100 and 31103 are used internally for Analog_Bridge to communicate with MMDVM_Bridge. You do not need to open those ports. As far as your connectivity to and from the DMR network, you do not need to open any ports. As long as you NAT and MMDVM_Bridge can reach the outside world on UDP port 62031, you are good.
The datafiles needed are downloaded via HTTP. You will need to be able to resolve addresses via DNS. Long story short, you do not need any inbound ports open.

I currently have the IP address of my DVswitch set to the DMZ in my router, and I would like to just forward the individual ports that I need forwarded for it to work.
