The statement of, "You now have the COMPLETE DVSwitch Server installed.," is correct. The P25 reflector is not part of DVSwitch Server.
apt install p25reflector

try again you can do DMR and hotspots with an XLX server

Instead of trying to use HB link or DVSwitch, look at configuring an XLX server. It supports DMR, D-Star and YSF out of the box and is much easier to setup, especially if you are not going to interconnect it to another network…

The only thing to keep in mind is you will need hardware for transcoding D-star… otherwise, it will handle DMR and YSF without hardware…. This is how I setup a “private” DMR for my local club.

FWIW:
WIRES x bridging would be done over RF using a radio and a hotspot. DVSwitch therefore doesn't care about that part, so long as the hotspot connecting the WIRES x room can talk to the reflector.

There is no way to connect a WIRES x room directly to a reflector other than through RF, at least if you want to keep it purely in the digital domain. I'm doing this through analog, connecting a Yaesu HRI-200 to an Allstar node, but that's completely different.

I'm using a ~2-year old version of MMDVM_Bidge on a Raspberry Pi and have encountered a problem with traffic not going between a YSF reflector and a WIRES-X room.

Are there release notes somewhere showing what changes have occurred to this program over the past 2 years?

Mike precede the reflector number 000127 with a 9. So, connect to 9000127 while in YSF mode.

Sorry for the noobie question. 
I wish to connect to FCS001 27 but I don't know how to set it up in DVSwitch. Apparently using 176.10.105.218:65000 is not enough. In fact I don't know how to point the reflector to operate on module 27.
Can you please help?

The issue was with the talk group.  The system was using an unnamed 5 digit talk group.  It appears that Brandmeister found out and shut it down.  It works now using a 7 digit talk group.

I have an allstar link setup with mmdvm bridge (1.63) and analog bridge (1.6.1).  I use thumbdv for the vocoder, all running on a RPI 4.    I am connecting to 3104 master.

Everything has worked great for the past several months.  (No changes or updates)  This morning DMR users reported only hearing the first 1 to 2 seconds of dmr audio from the bridge.  I connected my hotspot to the talk group and sure enough - when someone talks on the analog side, the connected dmr users only hear the first 2 seconds.
